BATTER
3 eggs, largeTOPPING I have never messed with the topping, just use blueberry or maple syrup
1 cup flour, all-purpose, sifted
3 teaspoons baking powder
1/2 cup milk, low-fat
2 tablespoons vegetable oil
2 bananas, large, ripe, mashed
1 banana, slicedSandra's notes
honey, warmed
maple syrup, warmed
1/4 cup pecans, chopped
The recipe was in TV Guide once in the 1980's, and I saved it.
Beat eggs until frothy, add other ingredients, bananas last.
Extra bananas don't hurt. Frozen and thawed bananas work great—nearly syrupy when they thaw.
1½ cups flour 1 TBS baking powder ¾ tsp salt ⅛ tsp nutmeg | Mix first four ingredients together in the bigger bowl. |
¾ cup milk 1 cup applesauce 2 TBS sugar 2 TBS butter, melted |
In another bowl, combine milk, applesauce, sugar and butter. |
2 eggs, beaten |
Add beaten eggs. Add liquid mixture to flour mixture just until moistened. |
adapted from Applehood & Motherpie, Junior League of Rochester, 1981—a book I got as a wedding gift in 1984
1 1/2 cup pancake mix ( or directions amount, this is for bisquick)
1 1/4 cup milk
1 Teaspoon Vanilla
2 Tablespoons of peanut butter
1 Egg
Mix well.
Then cook normally. If it is the "pancake mix" that only requires water, I still suggest milk. I have noticed that they burn easier with water.
