Cream together butter and sugar until smooth.
Add egg and grated lemon rind.
Sift together flour, salt and soda
Add to creamed mixture gradually.
Add lemon juice.
Add a little more flour or lemon juice to make a non-sticky dough that holds together.
These will hold a design from a cookie press (form balls and use a press), or roll out and cut with cookie cutters.
Bake at 400 degrees for 10 to 15 minutes, depending on the size of the cookies.
