Yep, I always called them pickled eggs, but then my ex-Amish friend told
me that Pickled Eggs were just eggs in some kind of vinaigrette thing,
and that what I make are Red Beet eggs! Oh well, whatever they are
called, here is the recipe.

Mix: 1 cup Cider Vinegar
1 cup of beet liquid (I usually just dump in a whole can of
sliced beets)
1/2 cup brown sugar
1/2 t salt
1 small onion sliced
4 whole cloves
1 cinnamon stick
Mix all in a jar. Good job for kids...SHAKE-SHAKE-SHAKE-
Add your hard boiled eggs. They taste best after sitting in fridge a day
or two. Last up to two weeks.

Don't shake it after the eggs are in or the cloves will mess them up!

The longer you leave them in, the closer to the yolk the red from the beets
will go.

We've used these for protein-snacks at camping events.
