Actually, being witness to a botched rabbit butchering, I can say rabbits
make a great deal of noise, horrifying similar to a baby's cry.

Rabbits are used because they are cheap and they breed like "rabbit" and
true to type. If you are breeding New Zealand Whites or even Californians,
all of the adults from a litter will usually max out at within an ounce of
the same weight. They mature quickly and they are easily handled. Rats are
used for the same reason and also because they grow tumors like crazy and
can be used for tumor/cancer testing.
