Pris

I saw that you "only use olive oil" does that really work on EVERYTHING
like vegetable oil? I love Olive Oil but Im afraid to use it for baking and
such as im afraid that it will make sweets taste funny. Sweets as in
Muffins ect. I hate canola and vegetable oil so im looking for a healthier
alternative to them other than applesauce.

well, I don't use OO to bake w/ just to cook w/ but I do substitute
applesauce for oil when baking to cut the fat ... oops, I just read the part
about not liking applesauce, it's the only alternative I know to cut the
fat, sorry ... maybe someone else will have another suggestion ... I have a
good friend who is a nutritionist/diatetician/whatever her title is, I'll
ask her what she'd suggest using instead of applesauce :)

Prunes and they don't change the taste, believe it or not <g> You can buy
the pureed prunes in most grocery stores. You sub out 1/2 and 1/2 to start
and see how your recipes do.

LOL I don't hate applesauce but I just don't like the way things taste when
I bake with it. Im not so much worried about fat per se but Saturated Fat.
Im not one of those people who doesn't eat anything with fat in it and
drinks diet drinks ect. I would just like the things I do eat to be as
healthy as possible while tasting good. Just wanted to make sure I didn't
sound to "Diet Train-ey" <grin>

try baking with an egg substitute (like ener-g). this would cut fat even if
you still used oil

Is that an equal ratio to what the oil is? Can you use it in the place of butter or shortening as well for baking? I bake a lot, and have heard about the applesauce thing, but not tried it yet.

For everyone looking for "Z" recipies, I have one family one that I can
share (which is good if you have a lot of "maters" too) and one I found in
one of my cookbooks tonight.....

This is my grandfathers Tomato,Zucchini Casserole

2-3 Large Tomatoes Thinly Sliced
2-3 Z's Thinly sliced
1-2 Large white onions thinly sliced
1 stick of butter (ok so I didn't say it was low fat but its GOOD)
parmesan cheese (kraft grated is fine)
garlic salt

Preheat oven to 350 degrees.
In a medium casserole dish (with a lid) begin one layer of tomatoes, then
a layer of Z's, then a layer of Onions, top with a generous pat of butter,
then sprinkle (generous again) parmesan and garlic salt over top. Do as
many layers as dish will hold as ingredients will shrink while cooking. On
the top layer use a LOT of parmesan and double the butter you used on the
other layers. TRUST ME THIS IS WONDERFUL. Its hubbys favorite food. Bake
for 45 min at 350 degrees.


Ok...the next recipie is from one of my favorite cookbooks.....

Zucchini Sticks

475 degrees. Serves 6

1/2 c + 1 tbsp bread crumbs
1/4 c parmesan
1 1/2 tsp fresh oregano, finely minced
3 Med Zucchini
Olive Oil Spray
Freshly ground black pepper

Preheat oven to 475 degrees. Combine bread crumbs, Parmesan and oregano on
a plate. Cut squash into evenly sized spears. Put them on baking sheet in
one layer, spray them with olive oil. Turn them all over and spray again.
Roll each in crumb mixture and back to oiled baking sheet. Bake 8-10 min.
till brown. Serve Hot.
