Vegan Brownies

Here's a good recipe for Vegan Brownies - I'm always being asked to make these again and again...

2 cups all-purpose flour
2 cups sugar
3/4 cup cocoa powder
1 tsp baking powder
1 tsp salt
1 cup water
1/4 cup vegetable oil
3/4 cup apple sauce
1 tsp vanilla extract

Preheat oven to 350 deg F, 175 deg C.

In a large bowl, stir together flour, sugar, cocoa powder, baking powder and salt. Pour in water, apple sauce, veg oil and vanilla extract and mix until well blended. Spread evenly in a 9 x 13 inch baking pan. Bake for 25 - 30 minutes until the top is no longer shiny. Leave to cool for 10 minutes before cutting into squares.

I have also varied this recipe by adding almond extract and 3 heaped dessertspoons of ground almonds, because I like almonds, but that would add protein ;)
