This may have been covered but long ago I was told that a bit of cheddar
cheese is a good night time snack because it can neutralize the ph of ones
mouth and help stop decay. I don't recommend skipping brushings but if
you've decided to let a reluctant preschooler off the hook from time to
time, a nice hunk of cheddar at bedtime might help keep mitigate the
possible consequences.

That's what we do...the only bedtime or middle of the night snack is cheese...Partly because of what you mentioned and partly because it seems to fill them up more then other choices.
